    DIRECTIONS

  • Heat the Aebleskiver pan between medium and medium high.
  • Mix almond flour, salt, monk fruit sweetener, baking soda, xanthan gum, almond milk, and lemon juice in a large bowl.
  • Separate eggs–mix the yolks into the almond flour mixture and set the whites aside in a separate clean bowl.
  • Whip the egg whites until soft peaks form.
  • Gently fold the egg whites into the almond flour batter.
  • Spray hot Aebleskiver pan with nonstick cooking spray.
  • Drop in rounded tablespoons of the batter into each cup of the Aebleskiver pan.
  • Cook until the tops start to bubble and the bottom of the ball is lightly browned. Turn the ball over in the cup to cook the other side (chop sticks work well to do this).
  • Remove from pan whenboth sides are golden brown and the center is done.
  • Serve with breakfast toppings, such as syrup, jam, whipped cream, berries, etc.
