Bob’s Red Mill Lemon Sugar Cookies

INGREDIENTS

  • 2 14 cups unbleached all-purpose flour
  • 12 teaspoonbaking powder
  • 12 teaspoonbaking soda
  • 12 teaspoonsalt
  • 34 cupbutter, soft
  • 1cupgranulated sugar
  • 1egg
  • 1teaspoonvanilla extract
  • 2tablespoonsfresh lemon juice
  • zest of one lemon (about a tablespoon)
  • 14 cupdecorator sugar (I didn’t know what sparkling sugar meant so I just rolled in sugar)

    DIRECTIONS

  • Preheat oven to 375 and line two baking sheets with parchment paper.(I skipped this step and found it unnecessary).
  • In a small bowl, mix together flour, baking powder, baking soda, and salt and set aside.
  • In a large bowl, mix together butter, and sugar until well combined, then add egg.
  • Add vanilla extract, lemon juice, and lemon zest.
  • Add dry ingredients and mix until combined.
  • Scoop cookies and roll the tops in sparkling sugar.Place 2 inches apart on prepared baking sheets and bake until edges are golden, about 12 minutes.
  • Let cool on baking sheets for 5 minutes, then move to a cooling rack.Makes 24 cookies.
