    DIRECTIONS

  • Cut chicken thighs into 1 inch cubes.  Add salt and baking soda to chicken in a bowl.
  • Mix.  Add beaten eggs and mix together.  Sprinkle cornstarch over chicken and mix until the cornstarch disappears.  Then add in the oil.  Again, mix.  (I use my hands). Heat oil in a fryer to 350 degrees.  Drop chicken in oil using.
