How to make delicious coffee at home: five tips

Many Brits pick up a coffee on the way to work or look forward to a coffee-shop catch up with friends every week. Lockdown is depriving you of barista-standard coffee, but that doesn’t mean you can’t whip up a delicious cup by yourself. Express.co.uk chatted to Head of Training and Brand Ambassador at Lavazza, David Cutler to hear his top tips.

How to make coffee at home

David Cutler (@some_coffee_guy) has been running a social distancing coffee shop from his home, offering residents in the local area delicious homemade coffee in support of frontline workers.

From selecting the right coffee capsules and plant-based milks to frothing milk without equipment, there are tips for everyone, regardless of their order.

Coffee quality

David said quality is key when it comes to purchasing coffee.

He explained: “If you decide that the convenience of capsules is for you then make sure you’re purchasing them (and capsule machines) from a good coffee supplier.

“In terms of ‘strength’, capsules can usually be spilt into two categories: 100 percent Arabica or blends of Arabica and Robusta.

“Both categories will often have different origin countries and different roast levels.

“These are grouped together and labelled with an “intensity” rating.

“Generally, capsules which are 100 percent Arabica tend to be less intense being lighter in body, sweeter and more aromatic.

“Arabica/Robusta blends are often more intense, heavier in body and slightly more bitter.

“For milk-based espresso recipes like a cappuccino and latte, I tend to prefer chocolatey, nuttier flavours which are low in bitterness.

“For those with similar preferences, consider selecting coffee made from 100 percent Arabica with a medium roast.”

Pick the right plant-based milk

David said: “For those who prefer to their coffee dairy free, look to buy barista plant-based milks.

“These products have been specifically designed to be used for coffee.

“Carbonates, phosphates and citrates are added to the recipe to increase the stability of the foam, and fat is added to enhance the flavour and texture.

“When choosing plant-based milks it’s important to consider what type of drink you’re making.

“For example, a latte contains a high percentage of milk and therefore the flavour you choose will be more pronounced, particularly when using almond or coconut milk.

“A flat white, on the other hand, typically has a 1/3 to 2/3 ratio of coffee to milk.”

Buy a cafetière

David explained: “The cafetière or French Press is the ideal brunch or after dinner companion.

“To create delicious coffee every time, I use a ratio of 1:15 (for every 1 gram of coffee use 15ml of water).

“Start by pre- heating the cafetière with boiling water to keep your freshly brewed coffee warm until it’s ready to be served.

“Once you’ve added hot water to the coffee, leave it for four minutes.

“After four minutes, using a spoon stir to break the ‘crust’ which has formed on the surface of the coffee and then discard the foam for an all-round better tasting cup.

“When selecting coffee for your cafetière you could choose a full-bodied style of coffee such as those which originate from Brazil, El Salvador or Indonesia.

“This is because coffee with these origins typically have a more chocolatey, caramel-ey flavour which lends itself to the full-bodied characteristics of cafetière-style coffee.

“Alternatively, you could also choose a crisp, light, floral style coffee such as a washed coffee from Kenya, Colombia or Ethiopia.

“The cafetière will maximise the body of the coffee and add an extra dimension of flavour.”

No-fuss froth

You don’t need a milk frother to create froth.

“The easiest way to make frothed milk at home is by using a sauce pan and a French Press.

“First, heat the required amount of whole milk in a saucepan until it reaches 68 degrees.

“In the meantime, heat up your French Press using hot water. Once the milk has reached optimum temperature, discard the water from the hot French Press and add the milk.

“Then using the plunger “pump” the milk vigorously to aerate it. I also like to tap the French Press while swirling it round to blend the foam and liquid milk together.

“This will form the glossy consistency we expect from barista standard coffee and will be ready to pour into your cup to serve.”

Purchase a machine

The easiest way to make the perfect cup of coffee is by purchasing a top-of-the-range coffee machine.
