Maple-Glazed Roasted Carrots

  • 6tablespoonsbutter, melted
  • 13 cupbrown sugar, packed
  • 13 cupmaple syrup
  • 34 teaspoonchili pepper flakes (optional)
  • 1pinchsalt and pepper, to taste

    DIRECTIONS

  • Preheat oven to 400 degrees,  Line rimmed baking sheet with foil.  Cut carrots if desired, or leave whole.  (I leave mine long.  If using baby carrots, reduce cooking time.).
  • Mix butter, syrup, brown sugar, salt and pepper, and pepper flakes if using,.
  • Lay carrots on foil lined pan.  Drizzle evenly with butter mixture.
  • Bake carrots, turning every 15-20 minutes , until tender.  50-60 minutes for larger carrots, about 20-30 for baby carrots.
  • Transfer to platter, drizzle with additional butter mixture if desired.
  • Serve and enjoy.
