Mary Berry is a food author and former judge on The Great British Bake Off. She has previously explained how to make a banana loaf that can be prepared in less than 30 minutes.

The sweet bake appeared to grow in popularity during the coronavirus lockdown as Britons have been spending more time at home.

The cake can be adjusted for all dietary requirements and upgraded with chocolate or nuts.

Mary has shared her simple recipe for making a banana loaf in the past.

The chef’s simple recipe takes less than 30 minutes to prepare and around one hour to cook and cool.


One ripe banana

75g plain flour

75g caster sugar

50g baking spread or butter

One tbsp milk

Half tsp bicarbonate of soda

Half tsp baking powder

One egg

50g dark chocolate chips

50g dark chocolate


Before mixing the ingredients, preheat the oven to 160C, or 140C fan.

Budding chefs should start preparing the batter by mashing a peeled banana in a large mixing bowl.

Then add the flour, sugar, butter, milk, bicarbonate of soda, baking powder and egg.

Beat the ingredients using an electric whisk until the mixture is smooth and combined.

Once the batter has been combined, add the dark chocolate chips and stir them into the mixture.

Next, spoon the mixture into a 450 gram, or one pound, loaf tin lined with greaseproof paper.

Bake in the preheated oven for around 45 minutes, or until the cake has risen and a golden brown colour.

When ready, remove from the oven and allow to cool in the cake tin for around 10 minutes before moving to a wire rack.

To make the topping, melt 50 grams of dark chocolate in a bowl over a pan of boiling water.

Stir regularly until the chocolate is nearly completely melted and then remove from the heat.

Once cooled, the chocolate can be added to a piping bag and drizzled on top of the cake.
