Scone recipe: How to make the Queen’s scones, from former royal chef

Queen Elizabeth II turned 94 on Tuesday (April 21) and while lockdown measures meant her birthday was quieter than usual she is still likely to have indulged in a sweet treat at high tea. The Queen is said to be a huge fan of scones and a former royal chef has shared how to make the royal tea staples.

The Queen’s former personal chef, Darren McGrady has revealed how to make the Queen’s favourite Royal Tea Scones on his YouTube channel.

The tradition of afternoon tea dates back to the 1900s and has been a royal custom ever since.

Mr McGrady was a royal chef for years and knows how to make a scone fit for a Queen.

He revealed the Queen doesn’t go a day without afternoon tea, no matter where she is in the world.

He said: “I remember being on the Royal Yacht Britannia, we flew out to Australia and it was 5 o’clock in the morning, but to the Queen it was five in the afternoon and it was time for tea, so my next job was making scones. “

The chef revealed the Queen liked to alternate daily between plain scones and fruit scones – sometimes with raisins and sometimes with sultanas.

Another key secret to making the Queen’s scones is that she always puts on the jam first before the cream.

How to make the Queen’s favourite scones

Mr McGrady explains you start by adding flour, sugar, baking powder and butter into a bowl.

Then rub all the ingredients together until you’ve got really fine breadcrumbs.

Then add the egg and slowly pour in the milk.

He warns against kneading too much and insists on lightly bringing the ingredients together instead.

Once the ingredients are combined, you should place the mixture on a lightly dusted surface and very gently knead the dough.

You should roll out the dough until it is one inch thick.

You should then use a two-inch cookie cutter to cut and shape the perfectly rounded scones.

Mr McGrady claims the secret to getting royal-worthy scones lies in the glaze.

A simple egg yolk glaze is a really important step as it makes the scones look “really pretty” when they are displayed on a table.

Once the scones are glazed you should place the tray in the oven at 350 degrees and bake them scones for about 15 minutes until they are golden.

Mr McGrady says you must wait for the scones to cool before covering them in cream.

According to the royal chef, the perfect scone is firm on the outside with a soft and fluffy centre that will melt the butter beautifully.

The Queen may be served scones tomorrow as well as a special cake to mark her birthday.
