Tom Kerridge loves to share recipes with his fans on social media, many of them included in his book Tom Kerridge’s Lose Weight and Get Fit. The chef explained how to make a weight loss breakfast recipe which fans thought was “delicious”.
The chef recently shared a picture of his stunning avocado toast with a caption reading: “Avocado toast is undeniably a legendary breakfast!!
“Add a layer of hummus and spice it up with some chilli to turn it up a notch.”
The recipe is ideal for those who are trying to lose weight and it is included in his book Tom Kerridge’s Lose Weight and Get Fit, which contains “high-flavour cooking for dieting and fitness.”
He explained: “We all know that avocado on toast is one of the most popular breakfasts – it’s been around for some years now – but adding a layer of hummus and spiking it with some chilli will turn it up a notch. Enjoy!”
Ingredients:
Two large slices wholemeal or brown sourdough bread
Two tablespoons hummus
One ripe avocado
80g cherry tomatoes, thickly sliced
Four pickled chillies or peppadew peppers, thinly sliced
One red chilli, thinly sliced
A small handful of basil leaves
Half a lime
Sea salt and freshly ground black pepper
Togarashi or dried chilli flakes, to sprinkle (optional)
The chef starts by toasting the sourdough bread and spreading the hummus.
“Halve the avocado, remove the stone and gently loosen the skin away from the flesh, using a large spoon,” he explains.
He then slices the avocado half, and gently flattens it with the palm of his hand and lifts it onto the toast.
He proceeds to sprinkle salt and pepper and finishes by adding the cherry tomatoes, pickled chillies, red chilli and basil leaves.
“Squeeze over the juice from the lime half and serve at once, sprinkled with a little togarashi or chilli flakes if you like,” Tom says.
Many fans loved Tom Kerridge’s healthy breakfast recipe.
