Curried lentil & sweet potato pies

    1 sweet potato, approx 250g, diced
    1 carrot, diced
    600g frozen vegetable curried dhal 


    1. Preheat the oven to 200°C, gas mark 6. Cook the sweet potato and carrot in boiling water for 15 minutes until tender, then drain and mash. Season well.

    2. Meanwhile, fry the vegetable dhal for 7-8 minutes and divide between 2 individual serving dishes. Top with the mash and bake for
    15 minutes.
