  • 2 (10 ounce) cans Ro-Tel tomatoes (fire roasted is best, but use any variety you like)
  • 1green onion, diced
  • 1smallshallot, diced
  • 1smalljalapeno pepper, diced
  • 3fresh garlic cloves, diced
  • 12 cup chopped fresh cilantro
  • 1 1/2 lime, juice of
  • 14 cupsugar
  • 1tablespoonkosher salt
  • 1teaspoonfresh ground black pepper
  • 1teaspoonground cumin
  • 12 teaspoonchili powder
  • 1dashcayenne pepper

    DIRECTIONS

  • drain Ro-Tel tomatoes
  • do not drain whole peeled tomatoes.
  • add all ingredients to a blender.
  • pulse on chop mode just until well blended.
  • you can add more or less lime juice, cilantro, or jalapeño to taste. If you leave the seeds in the chopped jalapeños the salsa will be more spicy, remove the seeds for less spice.
  • serve with tortilla chips.
  • enjoy!
