What to Make for Super Bowl Sunday: New England Lobster Dip and Philly Cheesesteak Queso

On this week’s episode of Mad Genius Live, Justin got ready for the Super Bowl with Chef Daniel Holzman of The Meatball Shop and Project Foodie.

Justin and Dan went head to head in a beer cocktail challenge featuring craft brews from New England and Philly: Harpoon IPA and Victory Golden Monkey Belgian-Style Tripel. Justin used the hoppy IPA to make a gin-and-honey concoction laced with fresh cilantro and lemon juice that won the day. Dan’s ginger-jalapeno-orange blend, balancing the fruity-spicy Tripel, was a very close second.

To honor the two teams playing this Sunday, Justin also made dueling dips: New England Lobster Dip and Philly Cheesesteak Queso with toasted hoagie slices. His lobster dip was packed with tender lobster and topped with crunchy Cape Cod Chips. The Philly Cheesesteak Queso combined American and provolone cheese with plenty of rib-eye steak, peppers and onions. We devoured them both before a winner could be declared.

Next, Dan was challenged with making the ultimate sheet-pan nachos in just 3 minutes. He beat the clock and created a towering tray filled with sweet and hot pickled peppers, meatballs (of course), thinly sliced red onions, and some shishito peppers. He layered it all with a blend of Munster and provolone cheeses.
