Autumn Harvest Bowl

Ingredients

  1. Sauce of choice
  2. Rice
  3. 2 cups green beans
  4. 1 sweet potato
  5. 1 cauliflower
  6. 1 can chickpeas
  7. 1 tsp chili powder
  8. 1/4 tsp paprika
  9. Pinch turmeric
  10. Salt
  11. Olive oil

Steps

  1. Preheat oven to 200. Line baking sheet. Spread vegetables on sheet. Spray with olive oil, salt.

  2. In a small bowl mix olive oil, chili powder, paprika, turmeric and salt. Pour over chickpeas. Roast for 30 minutes, stirring halfway through

  3. Cook rice. Serve. Drizzle with sauce.
