Baingan ka Bharta

It’s a recipe of eggplant grilled on open flame which adds smoky flavour to the dish and it’s absolutely breathtaking.


  1. 1 big Eggplant
  2. 1 Small to medium onion
  3. 1 medium tomato
  4. 1 green chilli
  5. 2 tablespoons chopped coriander
  6. 1 teaspoon red chilli powder
  7. Pinch turmeric powder
  8. to taste Salt
  9. 1 teaspoon coriander powder


  1. Put on the flame on the stove and put a big eggplant on it and cook it on low flame. Always use a big eggplant. 1 eggplant is enough for 2 people. Keep grilling it on open flame from different sides until it starts getting soft. Once done, take the eggplant off the flame and put it in ice water and remove the charred skin slowly.

  2. Once the skin is removed, cut off the top part and chop the remaining eggplant finely and keep it in side.

  3. On the other hand, heat some oil in the pan and put chopped onions in it and sauté it until it turns golden brown. Add green chilli and tomatoes and cook it for a while. After the tomatoes are cooked add salt, chilli powder, coriander powder, turmeric and cook it for 2 minutes.

  4. Now, add the eggplant and cook it for 5 minutes and mix it well. The dish should give a smoky and a juicy flavour. Add, finely chopped coriander and mix it well and serve.
