My husband loves this recipe and he grew up eating it. It’s a very quick meal to throw together and very easy. Perfect after a busy work day.
- 1 large chicken breast
- 1 can cream of chicken soup
- Chopped fresh broccoli
- 1.5 cups chicken broth
- 2 cups white instant rice
- Olive oil
Cut raw chicken into small squares.
Heat pan of olive oil on medium high and when hot add chicken.
Once the chicken has browned, add chicken broth and cream of chicken and bring to a boil.
Add white rice. Remove from heat and let it stand for 5 minutes.
Sprinkle with Parmesan and serve.
