Chicken Parmesan

Ingredients

  1. Chicken breasts (cut in half lengthwise to make a thinner slice)
  2. Salt
  3. Ground black pepper
  4. Paprika
  5. Flour, seasoned with salt and pepper
  6. Eggs
  7. Italian bread crumbs
  8. Parmesan cheese
  9. Marinara sauce (homemade marinara is better)
  10. Mozzarella cheese (shredded)
  11. Parsley or Basil (to garnish)

Steps

  1. Season the chicken breasts with salt, pepper and paprika

  2. Set up 3 shallow bowls : 
    1st bowl – flour seasoned with salt and pepper
    2nd bowl – 1 or 2 eggs; whisked
    3rd bowl – stir together parmesan and italian bread crumbs

  3. Dredge chicken in flour, then dip in eggs and turn to coat in breadcrumbs.

  4. Pan fry in light olive oil until cooked through at 165 deg F. For better result, Airfryer can also be used to cook the chicken.

  5. Pour half of your marinara sauce in a baking dish. Arrange the cooked chicken over the marinara in a single layer. Spoon on marinara sauce and top with shredded mozzarella cheese.

  6. Bake at 425 deg F for 15 mins until the cheese is melted and sauce is bubbling.

  8. Sprinkle some parsley or basil chops before serving.
