Cracker fried chicken tenders

Love these! They fry up so pretty and tender and crispy and they stay crispy even at room temp. I’ll freeze these for my hubs while I’m out of town. I love them dipped in white country gravy.


  1. 2 lbs chicken tenders
  2. 1 cup flour
  3. 2 eggs beaten with a little water
  4. 1 sleeve ritz crackers, crushed fine
  5. 1/2 cup Parmesan cheese
  6. to taste Salt pepper onion and garlic powders for cracker crumbs


  1. Prepare a cookie sheet with parchment paper. in a bowl, Crush the ritz crackers and add Parmesan and seasonings.

  2. Place the tenders in another large bowl. Add 1 cup of flour and coat them all. In a cup beat the 2 eggs with a little water and pour it over the tenders and flour and mix well. It will be very sticky. Using a fork, roll each tender in the cracker crumbs well then place on cookie sheet until you have filled it.

  3. In a cast iron skillet heat enough oil for a shallow fry. I added 2 tbsp butter flavored shortening To the oil.

  4. Fry in batches until golden brown and delicious.
