I’ve been looking around for the best mushipan recipe and after a couple of trials I’ve created this mushipan with the soft and fluffy texture that I wanted. It’s fairly easy as a base recipe for different combination of flavours. Give it a try!
- 50 g rice flour
- 50 g plain flour
- 1/2 cup milk
- 3 tbsp olive oil
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 tbsp vinegar
- 1 pinch salt
- 40 g sugar
Prepare steamer and line the lid with a cloth to prevent condensation. Bring water to boil.
Measure out and sift together flour, rice flour, baking powder, baking soda, and salt. Add sugar into the mix of dry ingredients.
Combine milk and olive oil in a bowl. Set aside. Prepare cupcake cups or line ramekins with cupcake wrappers.
Once the water is boiling in the steamer, gradually pour and mix in the olive oil + milk into the dry ingredients.
Finally add the vinegar and immediately pour into cupcake cups and transfer into the steamer.
Steam at high heat for 20min.
