Egg roll Bowl

Ingredients

  1. Green Onions, White parts chopped
  2. 1/2 Cup Red Onion
  3. 5 cloves garlic chopped
  4. 1 lbs Pork
  5. 1 Tsp Ginger
  6. 1 Tbsp Sriracha
  7. 14 oz Bag Coleslaw mix (broccoli preferred)
  8. 3 Tbsp Soy or Coconut Aminos
  9. 1 Tbsp Rice wine vinegars
  10. 1 tsp Pepper
  11. to taste Salt
  12. Topping Sauce
  13. 1/4 cup mayo
  14. 1-2 Tbsp Sriracha
  15. to taste Salt

Steps

  1. Chop the red onion, garlic, green onions (separating white and green parts)

  2. Cook the 1/2 cup red onions, 5 garlic cloves, and chopped white parts of the green onion in sesame oil for about 5 mins

  3. Brown the 1 lbs pork, stirring in 1 tsp ginger and 1 Tbsp Sriracha

  4. Add the coleslaw, 3 Tbsp soy sauce (or coconut aminos), 1 Tbsp rice wine vinegar, and 1 tsp pepper with salt. Cook for about 5 mins

  5. Whisk the 1/4 cup mayo and 1-2 Tbsp Sriracha.

  6. Garnish with the green, green onions
