Brunch on the patio with the family is one of my favorite things to do on a Sunday.
I threw this together today with ingredients I had on hand, and it was perfect for gorgeous al fresco dining. 🙂
Ingredients
- 1 cup medium precooked shrimp cocktail type shrimp
- 1 cup English (Hot House) cucumber that's been seeded and cut into 1/4" cubes
- 1 cup sweet bell pepper (red, orange, or yellow are good) cut into 1/4" pieces
- 2/3 cup sweet or red onion cut into 1/4" pieces
- 3 Tablespoons chopped fresh dill or 1 Tablespoon dry dill
- 2 Tablespoons Red Wine Vinegar
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 Tablespoon olive oil
