Fresh & Easy Shrimp Salad with Lemon Red Wine Vinegar, & Dill Dressing

Brunch on the patio with the family is one of my favorite things to do on a Sunday.

I threw this together today with ingredients I had on hand, and it was perfect for gorgeous al fresco dining. 🙂


  1. 1 cup medium precooked shrimp cocktail type shrimp
  2. 1 cup English (Hot House) cucumber that's been seeded and cut into 1/4" cubes
  3. 1 cup sweet bell pepper (red, orange, or yellow are good) cut into 1/4" pieces
  4. 2/3 cup sweet or red onion cut into 1/4" pieces
  5. 3 Tablespoons chopped fresh dill or 1 Tablespoon dry dill
  6. 2 Tablespoons Red Wine Vinegar
  7. 1 teaspoon salt
  8. 1 teaspoon sugar
  9. 1 Tablespoon olive oil
