Ingredients
- 1 cup balsamic vinegar
- 3 beefsteak tomatoes cut into 1/2 inch slices
- to taste Salt and pepper
- 2 tablespoons extra virgin olive oil
- 3 medium zucchinis. Cut into noodles with A blade
- 1 large chiffonade of basil
Steps
Place a medium saucepan over high heat and add in vinegar. Once boiling reduce to a simmer and cook until reduced halfway
While balsamic is cooking heat a grill or grilling pan. Brush tomatoes and zicchnni noodles with olive oil and season with salt and pepper.
Once the grill is heated add tomatoes. Let cook 2 minutes. Flip over cook another 2 minutes or until heated through and with grill marks
Add zucchini to the grill or grill pan perodically use the back of spatula to compress the noodles down to cook quickly if using a grill pan. Cook 3-5 minutes or until cooked through. When done cooking, zucchini will sweat so pay it dry and lay out in a dish. Seaso. With additional salt and pepper, and season with basil. Top with tomatoes, drizzle with balsamic vinegar on top
