The Gunpowder for Idli is one of the most famous items/condiments in India, especially down south in Tamil Nadu. The gunpowder is a versatile food item, which can be used both as a seasoning, or as a side dish or even as a powder for any of your choice of potato or vegetable fries. Gun powder or Molaga podi is made with a perfect blend of spices using the red chilies, urad dal, Toor dhal, hing or asafoetida, black pepper.
Ingredients
- 1 1/2 cup Urad dhal
- 1 cup Toor dhal
- 1/2 cup Peppercorns
- 1/2 cup Cumin seeds
- Garlic cloves-15
- Cooking Oil
- 1 cup Curry Leaves
- 2 tbsp Chilly Powder
- 2 tbsp Coriander Powder
- 1 tsp Hing
Steps
Roast the ingredients(except powders & Curry leaves) in a pan one by one without oil.
Once all the above are roasted separately, keep them aside and let them cool for a couple of minutes.
Roast Curry leaves and powders with little oil. dont roast more than 2 minutes.
In a mixer grinder, put all the roasted ingredients and add about a teaspoon of Hing and salt to taste and grind it all together.
Don’t grind it too powdery, let the texture of the mixture be a little coarse.
Enjoy steamed idli with Gun powder mixed with Coconut oil or Ghee or Gingelly oil.
My Tip:
I mostly prefer Gingelly oil. Its more healthy and enhance taste.l
