Mediterranean Baked Sweet Potatoes


  1. 4 sweet potatoes
  2. 1 can chickpeas
  3. 1 1/2 tsp olive oil
  4. 1/2 tsp cumin, coriander, cinnamon, paprika
  5. For sauce: Hummus
  6. 1 tbsp lemon juice
  7. 1 tsp dill
  8. 1 1/2 tsp garlic powder
  9. Water
  10. Salt
  11. Parsley
  12. Cherry tomatoes
  13. Lemon juice
  14. Pita chips for side


  1. Preheat oven to 200. Cut potatoes in half. Add rinsed chickpeas to baking sheet tossed with olive oil and spices. Rub sweet potatoes with olive oil and place face down on baking sheet. Bake for 25 minutes

  2. Make sauce by mixing ingredients. Toss parsley with tomatoes and lemon juice and set aside to marinate.

  3. Once sweet potatoes are fork tender remove from oven. Smash insides of potatoes, top with chickpeas, sauce and tomato garnish. Serve with pita chips.
