Ingredients
- 4 sweet potatoes
- 1 can chickpeas
- 1 1/2 tsp olive oil
- 1/2 tsp cumin, coriander, cinnamon, paprika
- For sauce: Hummus
- 1 tbsp lemon juice
- 1 tsp dill
- 1 1/2 tsp garlic powder
- Water
- Salt
- Parsley
- Cherry tomatoes
- Lemon juice
- Pita chips for side
Steps
Preheat oven to 200. Cut potatoes in half. Add rinsed chickpeas to baking sheet tossed with olive oil and spices. Rub sweet potatoes with olive oil and place face down on baking sheet. Bake for 25 minutes
Make sauce by mixing ingredients. Toss parsley with tomatoes and lemon juice and set aside to marinate.
Once sweet potatoes are fork tender remove from oven. Smash insides of potatoes, top with chickpeas, sauce and tomato garnish. Serve with pita chips.
