Mike’s Macaroni Salad

  • 1 14 cupsmacaroni
  • 34 cupmayonnaise
  • 2tablespoonscider vinegar
  • 1teaspoonsugar
  • 1teaspoonkosher salt
  • 14 teaspoonwhite pepper
  • 14 cupgreen onion, both green and white, sliced thin
  • 1stalkcelery, sliced
  • 3tablespoons shredded carrots
  • 12 cupfrozen peas, thawed

  • Put green onion, celery and carrot in mixing bowl.
  • Add the salt, sugar to the bowl and mix. Allow to sit for 10 minutes. This allows for some the water to be extracted to help with the sauce.
  • Add the vinegar, the pepper and the mayo. Mix well and refrigerate.
  • Cook macaroni according to box, then drain and rinse well with cold water, leaving it wet.
  • Fold macaroni and peas into sauce mixture, cover and chill.
