INGREDIENTS 1 1⁄4 cupsmacaroni 3⁄4 cupmayonnaise 2tablespoonscider vinegar 1teaspoonsugar 1teaspoonkosher salt 1⁄4 teaspoonwhite pepper 1⁄4 cupgreen onion, both green and white, sliced thin 1stalkcelery, sliced 3tablespoons shredded carrots 1⁄2 cupfrozen peas, thawed
DIRECTIONSPut green onion, celery and carrot in mixing bowl.Add the salt, sugar to the bowl and mix. Allow to sit for 10 minutes. This allows for some the water to be extracted to help with the sauce.Add the vinegar, the pepper and the mayo. Mix well and refrigerate.Cook macaroni according to box, then drain and rinse well with cold water, leaving it wet.Fold macaroni and peas into sauce mixture, cover and chill.
