Ingredients
- 1 onion
- 4 tsp garlic
- 1 cup pumpkin puree
- 1 cup canned tomatoes
- 1 cup vegetable stock
- 1/4 cup coconut milk
- 1 can black beans
- 1 can chickpeas
- 2 tablespoons red curry paste
- 3 tablespoons honey
- Salt & pepper
- Rice
Steps
Cook onion and garlic in oil spray for 5 minutes
Add pumpkin, tomatoes, vegetable stock, coconut milk, black beans, and chickpeas. Add 1 tbs red curry paste. Stir, add salt & pepper.
Add 1 tbs honey. Bring to a boil and stir. Reduce to simmer and cook for 15 minutes. Serve with rice.
