Pumpkin Curry

Ingredients

  1. 1 onion
  2. 4 tsp garlic
  3. 1 cup pumpkin puree
  4. 1 cup canned tomatoes
  5. 1 cup vegetable stock
  6. 1/4 cup coconut milk
  7. 1 can black beans
  8. 1 can chickpeas
  9. 2 tablespoons red curry paste
  10. 3 tablespoons honey
  11. Salt & pepper
  12. Rice

Steps

  1. Cook onion and garlic in oil spray for 5 minutes

  2. Add pumpkin, tomatoes, vegetable stock, coconut milk, black beans, and chickpeas. Add 1 tbs red curry paste. Stir, add salt & pepper.

  3. Add 1 tbs honey. Bring to a boil and stir. Reduce to simmer and cook for 15 minutes. Serve with rice.
