Quick cupcakes

My mom used to pack these in my lunch and she is great


  1. 3 eggs
  2. 3 tbsp milk
  3. 1/4 tsp salt
  4. 2 tablespoons chopped cooked ham
  5. 1 tbsp chopped tomatoes
  6. 1 tbsp chopped green bell pepper or spinach
  7. 2 fresh basil leaves chopped
  8. 1/2 cups grated cheese any type


  1. Crack the eggs and whisk them together in a large measuring cup mix the milk and salt

  2. Next line the bottom of the mini muffin tin with paper liners lightly spray or brush the bottom of the liners with oil to prevent the egg mixture from sticking

  3. Then you fill each cup with a bit of ham tomatoes green bell peppers or spinach and basil

  4. Top with grated cheese

  5. Pour the egg mixture all over the filling

  6. Baked in the oven for 10 to 12 minutes eat that your quiche cupcakes warm or chilled them to pack them in your kids lunches
