Spicy Chorizo Twice Baked Potatoes

  1. 2 potatoes
  2. 1/2 pound chorizo
  3. 1 jalapeño
  4. 1/4 cup chopped green onions
  5. 1/2 cup sour cream
  6. 2 tbspn milk
  7. 2 tbspn butter
  8. 1/2 tspn salt
  9. 1/4 tspn pepper
  10. 1 pinch cayenne


  1. Score potatoes with fork and cook in preheated oven at 400• F for one hour

  2. Chop jalapeños & green onions

  3. Cook chorizo in skillet at medium/high heat stirring constantly. You want a firm, almost crispy texture, similar to well done ground beef. Chorizo can have a mushy texture even when fully cooked, this method will remove that and cook out a large portion of the grease.

  4. Remove potatoes and scoop out their centers, leaving a bit on the sides so they maintain their shape like cups

  5. Mix the removed potatoes, jalapeño, sour cream, milk, butter, spices, most of the green onions, and most of the chorizo (saving to taste for toppings) in a bowl until combined

  6. Scoop mixture into potato bowls, cover with remaining chorizo, and bake for 15 more minutes.

  7. Remove from oven, plate, and top with remaining green onion, take a step bake and marvel in your greatness.
