Spicy cream of tomato soup

Love a bowl of hearty soup

Ingredients

  1. 1.5 kg plum tomatoes
  2. 5 mild red chillies
  3. 1 x punnet of mushrooms
  4. 1/2 x onion
  5. 4 x cloves of garlic
  6. 3 x stock cube
  7. leaves Lime
  8. Pepper
  9. Salt

Steps

  1. Heat oven, chop up tomatoes, chilli, onion and garlic. Roast all in a deep dish for 30 mins

  2. Add pepper to taste

  3. Roasted

  4. Boil up 4 pints or so of water, add stock and lime leaves

  5. Transfer the roasted dish to the pot and cook for another 30 mins.

  6. Take off the heat, add cream to taste

  7. Heat through for a further 10 mins.

  8. Serve and enjoy
