This VERY non traditional take on a Caprese salad is the perfectly refreshing snack to go with Saturday lunch or a little day drinking 😉
- 1/2 watermelon
- 1 cucumber, peeled and sliced
- 1 cup mint leaves
- 1 cup crumbled feta
- 1 cup balsamic vinaigrette
Heat balsamic vinaigrette in small sauce pan until simmering, reduce by 1/2 or 2/3 depending on how thick you like your reduction. Photo is a 1/2 reduction.
Slice watermelon into 1/2 inch thick pieces, roughly the diameter of your cucumber. You may round them out for presentation if desired.
Layer 1 slice watermelon, 1 cucumber, and 1 mint leaf ? repeatedly in a spiral until out of cucumber.
Sprinkle feta crumble on top, the. Drizzle balsamic reduction to taste.
