The dressing I want in summer. Super easy, super fast.
- 2 bunches herbs. Tarragon is traditional, but use any mix you like of cilantro, parsley, dill, etc. I've even used carrot tops
- 3 scallions
- 4 cloves garlic
- 1/2 avocado (optional)
- 1/2 cup Greek yogurt
- 2 tablespoons mayo
- Juice of 1 lemon
- Dash coriander
- Dash cumin
- Cayenne or red chili flakes (optional)
- Salt & black pepper
Roughly chop herbs, scallions (white and green parts) and garlic. Add to a tall, deep bowl.
Stir in avocado, yogurt and mayo.
Blend until creamy, with chunky bits of herb. If it’s too thick to blend, add some water or a bit more yogurt.
Stir in lemon juice and spices.
