Inspired by Josh McFadden by way of Deb Perelman.
- 1 head green cabbage
- 1 big white or yellow onion
- 4 cloves garlic
- 1 jalapeno
- 1 cup farro, barley, rice or any other grain
- 4-5 cups water or broth
- Lemon juice
- Salt & pepper
- Optional: Parmesan
Dice onion and saute it in olive oil on low heat. Add salt.
Chop garlic, jalapeno and cabbage. Add those to pot when onion starts looking golden. Cover pot and let steam for about 30 minutes. The cabbage should be soft, brown and sweet.
Add farro or other grain and broth or water. Bring to boil, then lower heat and let cook until grain is soft. Add lemon juice, salt and pepper to taste. Soup will be super thick; thin it out with water if you want it looser. Top with shaved or grated cheese if desired.
