Tex-Mex inspired brisket chili

Ingredients

  1. 1 cup chopped poblano peppers
  2. 1-4 chopped serrano peppers (depending on the desired heat)
  3. 1 small white onion, chopped
  4. 3 cloves garlic
  5. 1 tbsp butter
  6. 1 cup chicken stock
  7. 1 cup beer (I prefer dark beer like Modelo Negro or similar)
  8. 2 tsp cumin
  9. 1.5 tbsp chili powder
  10. 1/2 tsp black pepper
  11. to taste Salt
  12. 1 lb smoked brisket, chopped
  13. Juice from half of a lime
  14. 1 (15 oz) can crushed tomatoes
  15. 1 (15 oz) can pinto beans, drained
  16. 2 tsp corn flour or masa flour
  17. Garnish (Optional)
  18. Monterey-Jack cheese
  19. Sour cream
  20. Chopped cilantro
  21. Pico de gallo
  22. Lime wedges
  23. strips Fried corn tortillas

Steps

  1. Heat butter over medium heat in a 6 quart pot and add the onion, peppers and garlic. Cook for around 5 minutes, stirring often.

  2. Add the beer, chicken stock, dry spices, lime juice, tomatoes and beans. Stir in the corn flower and let simmer for 20 minutes.

  3. Ladle into bowls and garnish as desired.
