I have been making this cake for years now and it’s always a huge success and really simple to make. I have been perfecting the recipe so that it’s as easy and quick as possible so check it out!
- 200 g dark chocolate
- 200 g butter
- 150 g sugar (white or brown are both fine)
- 5 eggs
- 2-4 tbs white flour
Turn on the oven to 180C. Start by dividing the chocolate into squares and put them in a bowl together with the butter (chopped into pieces). Put the bowl into the microwave and melt the butter and chocolate on the defrost setting. You want chocolate and butter to be melted but not cooked together
In a separate bowl mix the sugar with the egg yolk only and keep the egg whites separate for now. Add the flour to the sugar and egg mixture.
Add the chocolate and butter to the egg yolks, sugar and flour mix
Beat the egg whites until stiff. A tip to check if they are stiff is to turn the bowl upside down – the egg whites shouldn’t fall out
Add the egg whites to the chocolate mixture a little bit at a time until all fully combined
Put into a greased cake tin. Cook in the oven for 30-40 min
I sometimes grate a bit of chocolate over the top to add some decoration, but you could decorate it however you like!
