Vegetarian Chili with Tortilla Crisps

Ingredients

  1. Tortilla chips
  2. Olive oil spray
  3. 1 onion
  4. 1 red pepper
  5. 1 yellow pepper
  6. 3 tsp garlic powder
  7. 2 tbsp chili powder
  8. 1 tbsp cumin
  9. 1/2 tsp cayenne pepper
  10. Salt
  11. Pepper
  12. 1 can whole tomatoes
  13. 1 can pinto beans
  14. 1 can black beans
  15. 1 can kidney beans
  16. 1/2 cup cilantro
  17. 1/4 cup sour cream
  18. 1/4 shredded chedder

Steps

  1. Heat pan with olive oil spray. Cook onion and peppers for 5 minutes. Add garlic, chili, cumjn and cayenne and cook 2 minutes, stirring well. Add salt and pepper. Add tomatoes, crushing gently with spoon.

  2. Add beans and 2 1/2 cups of water. Add salt and pepper and bring to a boil. Reduce heat and simmer until thickened, for 20 minutes, then stir in cilantro.

  3. Add to bown and garnish with sour cream, cheese, and cilantro. Serve with tortilla chips.
