Rotisserie Chicken Salad


  • 5 pounds deli rotisserie chicken, boned and meat chopped
  • 1white onion, chopped
  • 4hard-boiled eggs, chopped
  • ½ cup sweet-hot pickle relish
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • ½ teaspoon red pepper flakes
  • ½ cup mayonnaise, or to taste
  • salt and ground black pepper to taste

  • Step 1

    Combine chicken, onion, eggs, pickle relish, mustard, paprika, and red pepper flakes in a bowl; stir in mayonnaise by spoonfuls until mixture holds together but isn’t too moist. Season salad with salt and pepper.


  • Cook's Note:

    If you puree the onion, drain off the liquid before adding to salad. This method gives a slightly more intense onion flavor. This is great on bagel chips, crostini, croissants,and in pita pockets.
