Potatoes are an extremely versatile ingredient to cook with, but they often come in big bags and if not eaten quickly, they can sprout, turn green and end up in the bin.<\/p>\n
Express.co.uk spoke exclusively to Lucia Washbrook, sales and marketing director at Seasonal Spuds about how to store potatoes to ensure they last the longest.<\/p>\n
Lucia explained: \u201cLast year, research from the Waste & Resources Action Programme (WRAP) found that potatoes stored in the fridge can last more than three times as long compared with storing at room temperature, having the potential to save 100,000 tonnes of food waste per year.<\/p>\n
\u201cThe study led to the Food Standard Agency (FSA) changing its legislation regarding the storage of raw potatoes in fridges \u2013 which was previously advised against due to prior concerns over potential acrylamide formation when potatoes are fried, roasted or baked.<\/p>\n
\u201cThe study showed that home storage of potatoes in the fridge doesn\u2019t increase the acrylamide forming potential, making storing potatoes in the fridge therefore safe, whilst also extending their lasting period.<\/p>\n
