Then, cut the butter into pieces and add to a medium-sized pan with the honey and sugar.<\/p>\n<p>Melt slowly over low heat until the mixture resembles a liquid, then increase the heat under the pan and boil for about one minute.<\/p>\n<p>Leave to cool for 15-20 minutes to prevent the eggs from cooking when they are mixed in. Beat the eggs directly into the melted honey mixture using a wooden spoon.<\/p>\n<p>Sift the flour into a separate bowl and pour in the egg and honey mixture, beating until the batter is smooth but quite runny.<\/p>\n<p>Pour the mixture into the tin and bake for 50 minutes to one hour until the cake is \u201cwell-risen, golden brown and springs back when pressed\u201d, as instructed by Tara.<\/p>\n<p>A skewer pushed into the centre of the cake should come out clean when the cake is ready.<\/p>\n<p>Turn the cake out on a wire rack to cool then, in a small pan, warm two tablespoons of honey.<\/p>\n<p>Once loosened, brush it over the sponge to give a sticky glaze, then leave to cool.
